Sweet corn - colourful and so good for you! This is the nutrition info about sweetcorn.

Sweet corn is a good source of carbohydrate and contains a range of nutrients, especially B group vitamins. It is a good source of dietary fibre, folate and niacin, a source of riboflavin, thiamin, zinc, vitamin B6 and vitamin C, and contains a dietary significant amount of potassium. Phytonutrients include carotenoids, lutein and zeaxanthin, which are of particular interest due to their association with eye health. Phenolic compounds, namely phenolic acids, are also present.

Have you tried cutting the raw corn kernels from the cob, and then frying them in a non stick frying pan with a little oil? Cook until the kernels caramelise and enjoy. 

Easy meals with vegetables works in partnership with the Health Promotion Agency (HPA) and the Heart Foundation to produce a series of resources aimed at increasing vegetable consumption with sectors of the community who may have limited cooking skills, equipment, time and/or budgets.
